Salad dressings from the store can be pretty high in sodium and saturated fat. Making an olive oil based dressing like the one in this recipe is a healthier option, especially for your heart.
Ingredients:
- 3 tablespoons olive oil
- 1/3 cup cilantro, minced
- 1/3 cup orange juice
- 1/3 cup white vinegar (Or balsamic)
- 1 tablespoon honey
- 1/2 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon Sriracha sauce
- 1 apple cut into 1/2 inch wedges
- 2 1/2 ounces spring mix salad greens
- 1/2 cup walnut halves, toasted
- 1/4 cup blue cheese, crumbled
Instructions:
- In a large bowl, whisk together olive oil, cilantro, white vinegar, honey, garlic, salt and Sriracha sauce to make the dressing.
- Toast the nuts.
- Place apples in a zipper storage bag and toss with 1/4 cup of the dressing. Set aside remaining dressing.
- Place apple slices on a grill rack over medium heat. Grill until tender and lightly browned (three to four minutes per side) brushing with reserved marinade.
- Place greens in a bowl, add the dressing and toss to coat.
- Plate greens and top with grilled apples, walnuts and cheese.
